Understanding black pepper grades — and why they matter
Not all peppercorns are equal. Bulk density, origin and harvest timing decide whether your pepper bites or merely dusts.

Pepper is graded by bulk density — the weight of a litre of berries. The heavier the berry, the more mature it was at harvest and the more piperine and volatile oil it carries.
A 550 g/l berry and a 500 g/l berry look almost identical in a jar. In a pan, the difference is unmistakable.
Where origin comes in
Vietnamese pepper is prized for consistency and clean heat. Indian Malabar berries carry a rounder, more resinous aroma that suits slow-cooked gravies.
We buy both, cleaned to a single grade, so each pack behaves the same way every time you open it.
How to buy well
Look for uniform size, a dark wrinkled skin and no dust at the bottom of the pack. Crush one berry between your fingers — if the aroma does not reach you instantly, the oil has already gone.
Buy small, grind fresh, and store away from the stove.
